The approach
I speak Arabic, I'm working on my Japanese, and I've run marathons in Tokyo, London and Berlin, which mostly served as an excuse to eat in all three. Explore is where the food from those trips goes: the markets, the producers, the dishes that don't travel, and the ingredients worth bringing home.
